Produce
  • 1 lb Carrots, fresh whole
  • 3 Thyme stems – chopped, fresh (approx 2-3 tablespoons)
Condiments
  • 2 tbsp Lemon juice
    2 tbsp honey
Baking & Spices
  • 1 Salt & pepper
    1/2 teaspoon dried ginger or 1 tablespoon fresh ginger, diced
Oils & Vinegars
  • 2 tbsp coconut oil

  • Preheat oven to 400 degrees.
  • Place your carrots, lemon juice, ginger, honey, thyme in a single layer on baking sheet.
  • Roast for 25 – 40 minutes, depending on size. Flip and roast until fork tender. Add a little water in dish to not scorch.
