Breakfast:

Sweet Potato Crust Quiche

Included in Full box – orange bell pepper, tomatoes, sweet potatoes

Makes 1 – 9″ quiche

Ingredients

Veggies — 30-70%

  • 2 medium sweet potatoes
  • 1 small onion, finely chopped
  • 1 orange sweet bell pepper, chopped
  • 2 cups broccoli, chopped
  • 1 cup tomatoes, chopped

Eggs, Fish, Natural Dairy– less than 5%

  • 6 eggs
  • 3/4 cup plain Greek yogurt
  • 1/3 cup sharp cheddar, grated

Condiments  — less than 5%

  • 2 Tablespoons olive oil

Seasonings & Spices

  • 1 teaspoon pepper
  • 1/2 teaspoon real salt

Directions

  1. Preheat oven to 350°F.
  2. Use a cheese grater to shred your sweet potatoes into a microwave-safe bowl.  Microwave for 6 minutes, stirring every 2 minutes.  Set aside.
  3. Heat olive oil in a skillet over medium heat.
  4. Add in onion and bell pepper and sauté until soft, about 6 minutes.
  5. Add in broccoli and chopped tomatoes and cook for another 6 minutes.
  6. In a separate bowl, whisk together eggs, greek yogurt, cheddar and salt/pepper.
  7. Add in the onion-broccoli-tomato mixture.
  8. Grease a spring-form pan or pie pan.  Place your microwaved sweet potatoes in a layer in the bottom of the dish.
  9. Pour egg mixture over the top.  Use a spoon to poke holes in the shredded sweet potato layer to let the eggs seep down into them.
  10. Bake for 30-35 minutes, or until eggs are just set.
  11. Allow to cool 10 minutes before slicing and serving.

Southwest Salad With Chipotle Dressing

Ingredients

DRESSING

Eggs, Fish, Natural Dairy– less than 5%

  • 1 cup plain yogurt 
  • 1/2 cup buttermilk

Seasonings & Spices

  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 3/4 tsp chili powder
  • 1/4 tsp cumin
  • 1/8 tsp cayenne pepper

TORTILLA STRIPS

Grains — less than 20%

  • 6 small corn tortillas

SALAD

Veggies — 30-70%

  • 1 head iceberg lettuce
  • 1 can black beans
  • 1 1/2 cup corn kernels
  • 1 large tomato
  • 1 bunch green onions
  • 1 orange sweet bell pepper, chopped

Eggs, Fish, Natural Dairy– less than 5%

  • 1 1/2 cups shredded cheese

Instructions

  • Preheat the oven to 400 degrees. Use a pizza cutter to slice the tortillas into thin strips. Line a baking sheet with foil and coat it with non-stick spray. Spread the tortilla strips out in a single layer and spritz lightly with more non-stick spray. Sprinkle lightly with salt.
  • Bake the tortilla strips for 15-20 minutes or until they are golden brown and crispy. Stir the tortilla strips half way through cooking.
  • While the tortilla strips are baking, cut the head of lettuce into small pieces. Rinse the lettuce and drain well (or use a salad spinner). Also chop the tomato and slice the green onions. Rinse the black beans in a colander to remove the starchy canning liquid. Remove the corn from the freezer and allow it to thaw.
  • Whisk together all of the ingredients for the dressing (yogurt, buttermilk, salt, garlic powder, chili powder, cumin, and cayenne). Makes about 1.5 cups or 6 servings of 1/4 cup each.
  • Once the tortilla strips are finished cooking, the dressing is made, and all of the salad ingredients are prepped, build the salad! You can either build one big salad and then serve or build individual portions. Layer the lettuce first, then black beans, corn, tomato, shredded cheese, green onion, and a few tortilla strips on top.

Dinner Ideas:

Quick-Sauteed Skinny Stir-Fry Slaw

with Red & Green Cabbage & Carrots

Included in full box: shredded red & green cabbage & carrots

  • strips turkey bacon (pasture-raised, chopped)

Condiments  — less than 5%

  • 2 Tablespoons olive oil
  • tablespoon coconut oil

Veggies — 30-70%

  • cloves garlic (finely chopped)
  • onion (chopped)
  • bag coleslaw — red & green shredded cabbage & carrots
  • 1/4 parsley, chopped
  • 1 orange sweet bell pepper, chopped (optional)
  1. Cook the turkey bacon until crisp, drain, crumble. Shred cabbage & carrots finely.
  2. In a large skillet or wok, heat 2 tablespoons of coconut oil and sauté the garlic, onion, pepper and carrots for a few minutes until softened. Add 1 more tablespoon of oil, and add the shredded cabbage along with half of the cooked bacon, and stir fry until the cabbage softens. Top with chopped parsley.

  • 8 slices turkey bacon cooked and drained

Veggies — 30-70%

  • 2 heads fresh broccoli chopped
  • 1 carrot, grated
  • 1/2 large onion chopped
  • 1/4 orange bell pepper, chopped

Eggs, Fish, Natural Dairy– less than 5%

  • 2/3 cup nonfat plain greek yogurt
  • 1 1/2 cups sharp Cheddar cheese shredded

Condiments– less than 5%

  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey

Fruits, Seeds, Nuts — 10-40%

  • 1/4 cup dried cranberries
  • 1/4 cup chopped walnuts or pecans

Instructions

  1. In a large bowl, combine broccoli, turkey bacon and onion.
  2. Prepare the dressing in a small bowl by whisking together the greek yogurt, apple cider vinegar, honey. Combine dressing with salad.
  3. Stir in cheese, dried cranberries, and walnuts.
  4. Cover, and refrigerate until ready to serve.

Curried Egg Salad

(with Leftover Easter Eggs) Optional: Wrap

Ingredients

Eggs, Fish, Natural Dairy– less than 5%

  • 5 good quality eggs
  • 3 tablespoons plain yogurt

Fruits, Seeds, Nuts — 10-40%

  • 1/4 cup pecans, toasted and chopped

Seasonings & Spices

  • 2 big pinches of salt
  • 1 1/2 teaspoons curry powder (turmeric)

Veggies — 30-70%

  • 1/2 small onion, chopped
  • 1/4 orange bell pepper, chopped
  • 1/2 medium apple, chopped
  • 1 small bunch of chives, minced
  • 3 asparagus spears, chopped
  • 3 green beans, chopped

Use leftover Easter eggs, boiled.  Or, you need to boil the eggs properly (the key to good egg salad!). Place the eggs in a pot and cover with cold water by a 1/2-inch or so. Bring to a gentle boil. Now turn off the heat, cover, and let sit for exactly seven minutes. Have a big bowl of ice water ready and when the eggs are done cooking and place them in the ice bath for three minutes or so – long enough to stop the cooking.

While the eggs are boiling and cooling, combine the yogurt, curry powder and salt in a tiny bowl. Set aside.

Crack and peel each egg, and place in a medium mixing bowl. Add the curried yogurt, onions, apple, orange bell pepper, chopped asparagus, chopped green beans, pecans, and chives. Now mash with a fork. Don’t overdo it, you want the egg mixture to have some texture. If you need to add a bit more plain yogurt to moisten up the mixture a bit, go for it a bit at a time. taste and add more salt if needed. Enjoy as-is, or served wrapped in lettuce or between two slices of good, toasted bread.

Easter Breakfast:

Hot Cross Buns

Eggs Benedict with Avocado and Roasted Red Pepper

Ingredients

For the Hollandaise Sauce:

  • 1/2 cup (1 stick) unsalted butter
  • 2 egg yolks
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon kosher salt
  • Pinch cayenne pepper (optional)

For the Eggs Benedict:

  • 4 English muffins, sliced in half
  • 2 tablespoons butter
  • 1 small avocado, sliced
  • 1 small jar roasted red peppers, drained
  • 2 tablespoons white vinegar, divided
  • 8 eggs

Instructions

To Make the Hollandaise Sauce:

  1. Eggs will cook thanks to the heat of the butter, and the sauce will form. It will be pale yellow and fairly runny. Pour into a bowl and keep in a warm place until ready to serve. I usually set mine over a bowl of warm water.

To Make the Eggs Benedict:

  1. Toast the English muffins and butter them. Lay two toasted English muffins each, buttered side up, onto four serving plates. Layer avocado, then roasted red peppers, over the top.
  2. Now, poach the eggs. Fill a shallow (about 3-inch) saucepan about 3/4 of the way full with water and set it over high heat. Stir in a pinch of salt and 1 tablespoon of vinegar and bring to a boil. Meanwhile, crack four of the eggs into individual bowls or teacups. Gently lower the teacups into the water, allowing the water to creep a bit into the cup before pouring the egg completely into the water. Repeat as quickly as possible with remaining three eggs. Cook for 3 minutes exactly. (Set a timer!) Be sure not to let the water boil over and if any white foam appears, gently skim it off with a spoon. Once the 3 minutes is up, scoop the poached eggs out of the water with a slotted spoon and set one egg on top of each muffin. To poach the remaining four eggs, discard water and start with fresh water, salt, and the remaining tablespoon of vinegar.
  3. Once the Eggs Benedict are assembled, drizzle Hollandaise sauce over each and, if desired, sprinkle with additional cayenne or garnish with a basil leaf or chopped chives. Serve immediately.

Morning Glory Baked Oatmeal Squares

Grains — less than 20%

  • 1/2 cup steel-cut oats
  • 2 cups boiling water
  • 2 1/2 cups old-fashioned rolled oats

Spices

  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon chopped fresh ginger (or dry ground)
  • Pinch of ground nutmeg

Eggs, Natural Dairy, Oil — less than 5%

  • 1 large egg
  • 1 1/2 cups milk

Condiments  — less than 5%

  • 1/2 cup raw honey or pure maple syrup
  • 1 1/2 teaspoons vanilla extract

Seeds, Nuts or Avocado 10-40%

  • 1/2 cup unsweetened coconut flakes

Instructions

  1. Preheat the oven to 375ºF. Spray a 9×9 inch baking dish with oil or cooking spray. Set aside.
  2. In a large heat-proof bowl, mix together the steel-cut oats and boiling water. Cover with plastic wrap and let sit for 15 minutes.
  3. Add the rolled oats, sea salt, cinnamon, ginger and nutmeg to the large bowl and mix until combined.
  4. In a medium bowl or large liquid measuring cup, whisk together the egg, milk, maple syrup, vanilla and orange zest. Pour the mixture into the large bowl and mix again until combined. Mix in the carrot, apple, raisins and coconut.
  5. Pour into the prepared baking dish and spread evenly in the pan. Bake for about 40 minutes, or until set and golden brown.

Boiled Eggs – Easy Peel Recipe

Place eggs in a single layer and cover with COLD water  2″ above egg, in a large saucepan. Add about 1 teaspoon of sea salt and 1 teaspoon baking soda to the cooking water to increase the alkalinity, which will make the eggs easier to peel later on. Cover with a lid and bring water to a boil over high heat; when the water has reached a boil, set the timer and Boil for 1-2 minutes over medium-high heat, then remove from heat and let sit covered for 10 minutes for perfect hard-boiled eggs. When ready, run COLD water over the eggs,  and if you are peeling the eggs right away, give them a little crack in the cold water and then peel easily.

Rice Frittata with Caramelized Tomatoes, Asparagus & Smoked Gouda

A Frittata is similar to a crustless quiche.

  • 1 pint cherry tomatoes or chopped tomatoes – Included in Full Boxes
  • 1/4 pound thin asparagus sliced into 1 1/2-inch pieces – Included in Full Boxes

Grains — less than 20%

  • 1 cup cooked American Grown brown rice

Eggs, Fish, Natural Dairy– less than 5%

  • 6 large eggs
  • 1/2 cup shredded Smoked Gouda cheese divided

Condiments for Dressing — less than 5%

  • 1 tablespoon olive oil

Seasonings & Spices

  • 1/2 teaspoon salt
  • 1/8 teaspoon ground pepper
  • 2 medium cloves garlic minced

Instructions

  • Preheat oven to 350 degrees.
  • Heat an oven-proof nonstick skillet pan on high heat, and add olive oil. Salute the tomatoes and garlic in olive oil until the tomatoes pop and soften and start to caramelize and turn brown/black in spots. Reduce heat to medium.
  • While tomatoes are cooking, mix together rice, eggs, 1/4 cup cheese, salt and pepper.
  • Add asparagus to the tomatoes and garlic and toss to coat with oil.
  • Pour egg mixture over all. Top with additional 1/4 cup shredded cheese.
  • Cook on medium heat for about 7 minutes, until eggs start to bubble and set.
  • Place pan in the oven for another 20 minutes or until puffed and the top is golden brown.
  • Serve hot or cold.

Notes

For the most savory flavor, cook your rice in low sodium vegetable stock rather than water.

If you don’t have an ovenproof nonstick pan, transfer cooked tomatoes, garlic and asparagus to a greased baking pan, pour egg mixture over and add an additional 5-10 minutes in the oven.

Roasted Broccoli with Fresh Lemon and Garlic

  • 1 Meyer or other lemon, thinly sliced (about 1/8-inch slices)
  • 3 cloves garlic, sliced
  • 2 tablespoons olive oil
  • Coarsely ground salt and pepper to taste
  1. Preheat oven to 400ºF.
  2. Toss all of the ingredients in a bowl. Transfer to a baking sheet that’s been sprayed with additional oil or lined with parchment paper. Roast for 15-20 minutes, stirring after 10 minutes, until the broccoli is tender and just beginning to brown. read more

Roasted Salmon with Honey

Green Beans with Lemon Parmesan

  • 2 pounds green beans, trimmed – Included in Full Boxes
  • 1 tablespoon + 2 teaspoons light olive oil, divided
  • Salt and pepper, to taste
  • 1 large clove garlic, minced
  • 3/4 cup panko breadcrumbs
  • Zest from 1 lemon
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  1. Preheat oven to 400ºF. Put a rimmed baking sheet in the oven while it preheats.
  2. In a large bowl, toss the green beans with a tablespoon of oil and a few pinches of salt and pepper. Once the oven has finished heating up, remove the baking sheet from the oven and carefully transfer the beans onto it. Roast for about 15 minutes, stirring halfway through the cooking time, until the beans are tender, but still crisp.
  3. While the beans are cooking, heat the remaining 2 teaspoons of oil in a medium skillet over medium heat. Add the garlic and cook for 30 seconds, until fragrant. Stir in the panko and cook for about 5 minutes, stirring often, until it’s toasted and golden brown in color. Transfer to a small bowl and let it cool slightly, then toss the panko with the parmesan cheese and lemon zest; season with salt and pepper to taste.
  4. Transfer the green beans to a serving platter and drizzle them with fresh lemon juice. Top the beans with the panko mixture and serve immediately.

Rosemary Roasted Carrots

Ingredients

  • 2 ripe bananas – Included in Full Boxes
  • 1 tablespoons cane sugar
  • 1 tablespoons corn starch
  • Pinch sea salt
  • 1 1/4 cup coconut milk
  • 2 egg yolks
  • ¼ teaspoon vanilla extract
  • Shortbread cookies (Pepperidge Farm Chessmen Cookies optional)

When bananas are roasted they caramelize sweetness.

Preparation for each serving

1. Preheat the oven to 350 degrees. Bake 1 banana in its skin on a baking sheet for about 30 minutes, or until the skin has burst. Carefully peel and mash. Set aside. Peel and slice the other banana, set aside.

2. Off the heat, in a small saucepan, mix the sugar, cornstarch, and salt. Gradually whisk in the coconut milk, making sure the cornstarch does not clump. Whisk in the egg yolks.

3. Turn the heat onto medium, and heat the custard. Stir constantly until the custard begins to thicken and bubble, about 10-15 minutes. Be patient — don’t turn up the heat, just keep stirring and it will suddenly thicken. Turn the heat down to low and cook for 1 more minute.

4. Remove the custard from the heat and stir in the mashed banana and vanilla extract. Pour the entire mixture into a shallow bowl then top with reserved sliced bananas or if using cookies, pour just enough to cover the bottom. Layer with banana slices and crumbled shortbread cookies, then cover with custard. Repeat the layers, ending with the custard on top. Add 1 cookie to top.

5. Chill for at least 1 hour. Serve.

Make a whole batch weekly and enjoy them for breakfast all week, without even having to reheat. Just as delicious from fridge as oven-heated.

  • 4 cups baby spinach or greens, chopped INCLUDED IN FULL BOXES
  • 1 small onion, finely chopped  INCLUDED in boxes
  • ½ bell pepper, finely diced (any color green, red, orange)
  • 1/2 cup tomatoes, finely chopped

Spices

  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • fresh thyme or oregano
  • dash of grated nutmeg (optional)
  • 1 garlic clove, minced

Eggs, Natural Dairy, Oil — less than 5%

  • 8 whole eggs
  • ½ cup egg whites
  • 100g Feta cheese, crumbled
  • 1 tablespoon olive oil

Instructions

  • Preheat oven to 350F and coat a 12- large cup muffin pan with olive oil.
  • Saute onions in skillet 4-5 minutes. Add salt, pepper, garlic and bell pepper and continue cooking for about a minute.
  • Add greens and toss gently about one minute. Remove from heat and set aside.
  • In a large mixing bowl, add whole eggs, egg whites, fresh thyme and nutmeg. Beat until  frothy. Add spinach, tomatoes and cheese.
  • Spoon into prepared muffin tin. Do not fill the cups more than ¾ of the way to avoid spillage.
  • Cook for 22-25 minutes, until eggs are set and top starts to color.
  • Allow to cool on a cooling rack for at least 10 minutes before removing frittata from cups.
  • Can be served immediately, but is equally good served cold for on the go breakfast with hot tea.

Skillet Dinner: Roasted Carrots or Sweet Potato with Dark Leafy Greens

Instructions

  • Peel and chop the sweet potatoes or carrots into slices or small squares.
  • Melt the coconut oil in a large skillet and add the garlic.
  • Cook the sweet potatoes or carrots in the oil and garlic until they are about 90% done.
  • Add in chopped greens and cook until soft.
  • Remove the sweet potatoes and greens from the skillet.
  • Cook 3 eggs in the skillet.
  • Add the sweet potato and greens mix back to the skillet. Top with salt/pepper and crushed red pepper.
  • Serve hot and enjoy.

Raspberry Green Tea

4 oz fresh raspberries

4 oz green tea

2 qts pure water

2 or more teaspoons Honey

Heat 1 quart water and raspberries to boil. Add honey or sugar to make a raspberry syrup. Simmer 5 minutes. Add teabags to the other quart of boiling water, steep 5-10 minutes and remove teabags. Add raspberry syrup to green tea and serve hot or iced cold. Garnish with fresh thyme or mint.

While oil is heating, add fresh herbs, salt, and pepper to the eggs and beat vigorously until the eggs become light and airy. When the oil becomes hot, slowly pour the eggs into the pan. Once the eggs are in the pan, do not stir! Let them just sit to cook. Stir optional cheese and veggies together and spoon down center of the omelet and heat, not burning eggs.  Quickly fold one side of the omelet over the veggie filling…Serve.

  • 1 head cabbage , dark loose leaves removed
  • Pink or real sea salt and black pepper to taste
  • 2 tablespoons olive or coconut oil

Instructions

  • Preheat your oven to 400 degrees.
  • Slice the cabbage into 1/2 inch thick steaks
  • Brush with oil on both sides and place onto cookie sheet.
  • Season to taste with sea salt and black pepper
  • Roast for 17-20 minutes or until caramelized.

 

Broccoli Casserole

  • 3 large baking potatoes
  • 3 cups chopped fresh broccoli florets (about 2 heads), cooked
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • 1 2/3 cups sour cream
  • 2 tablespoons chopped onion
  • 2 cups shredded cheese
  1. Preheat oven to 375 degrees F.  Thoroughly wash and scrub potatoes.  Pierce potatoes with a fork.  Wrap each potato tightly with foil.
  2. Place potatoes on a baking sheet and bake for 1 hour, or until tender.
  3. Add butter, salt and pepper.  Stir with a large spoon until butter is melted.
  4. Add sour cream, onions and cheese.  Stir to combine.
  5. Add cooked broccoli florets and gently stir to combine.
  6. Spoon into a casserole dish.  Cover and bake for 15-20 minutes, or until completely heated and cheese is melted.

 

Roasted Broccoli

2 tablespoons extra-virgin olive oil or coconut oil

3 cloves garlic, sliced

Sea salt and freshly ground pepper

  • Preheat oven to 450 degrees F.
  • Toss broccoli florets with oil, garlic, salt, and pepper on a baking sheet.
  • Spread out, roast, without stirring, until crispy about 20 minutes.
This recipe idea is for simple stewed tomatoes made with fresh tomatoes, salt, pepper, butter, and honey or sugar (optional).

  • Sauté some finely chopped celery, onion, and bell peppers for a zestier, more flavorful dish.

FIRE CIDER DRESSING

15 Farmacy Ingredients

  • 2/3 cup coconut oil, melted -optional

Flip the salmon and grill for 2 to 4 minutes longer, or until the salmon is just cooked through. Brown the top under broiler, slightly, and transfer the salmon to a plate and keep warm.

Arrange the spinach salad on a serving platter and top with the fillets. Drizzle with half of the vinaigrette and serve immediately, passing the remaining vinaigrette at the table.

  1. Preheat the oven to 400 degrees F. Spray an 18-by-13-inch sheet pan with cooking spray.
  2. Melt the butter with the thyme in small saucepan over medium heat. Whisk in the flour and cook, stirring, until a sandy consistency, about 1 minute. Pour in the chicken broth, whisking constantly until smooth. Stir in 2 teaspoons salt and a few grinds of black pepper and bring to a boil. Lower the heat and simmer gently until thickened and the flour flavor is gone, about 10 minutes.
  3. Meanwhile, add the chicken, onions, carrots and celery to the prepared sheet pan and toss to combine; set aside.
  4. Stack 2 puff pastry sheets on top of each other on a lightly floured surface. Roll the puff pastry out to a 15-by-15-inch square. Cut the pastry into 1-inch strips so you have 15 strips total. Repeat with the remaining 2 puff pastry sheets.
  5. Pour the gravy over top of the chicken mixture on the sheet pan. Arrange the pastry strips over the filling lengthwise, overlapping them slightly so most of the filling is covered. Trim any overhang from the edges of the pan. Brush the pastry with the egg wash and bake until deep golden brown, 35 to 40 minutes.

Irish Vegan Farmhouse Soup

INGREDIENTS:

1 large organic white onion, peeled and diced

2 large organic carrots, peeled and cubed

1 stalk of organic celery, peeled and cubed

2 large organic potato, peeled and cubed

1 organic parsnip, washed and cubed

1 leek, washed and sliced

2 bay leaves

1 bunch parsley, chopped

5 cups of organic unsalted vegetable stock

3 tablespoons olive oil

sea salt and cracked pepper to taste

DIRECTIONS:

Heat olive oil in a large sauce pan. Add the onion and leeks and sauté.

Add the organic vegetable stock parsnips, potatoes and carrots. Bring to a simmer.

Add celery, salt, pepper, bay leaves, 1/2 the parsley.

Cover and cook for 25-30 minutes.

Irish Potato Salad

Ingredients

1 lb small new potatoes
1 tbsp butter
1/2 cup scooped avocados, sprinkled with lemon juice
Salt and a little freshly ground black pepper
1 tbsp. chopped fresh chives

Method

Put the potatoes on the boil for 20 to 25 minutes. Until they fall off the knife when you stab them. Strain them and cut them into bite-sized pieces if needed. Pour into bowl. Add butter and stir until melted. Add scooped avocado with lemon, and salt and pepper and stir until potatoes are coated. Garnish with chives.

Spicy Cashew Dressing:

  • 1 tbsp cashew butter*
  • 1 tbsp apple cider vinegar
  • 1/2 tbsp water
  • 1/4 tsp hot sauce

*or use another nut butter of your choice

Directions

  • in a medium bowl, combine the dressing ingredients, and whisk together well.
  • In a large bowl, combine salad ingredients, except the cashews. Add the cashew dressing to the salad and toss. Sprinkle cashew nuts on top and serve.
  1. Preheat the oven to 400 degrees F. Spray an 18-by-13-inch sheet pan with cooking spray.
  2. Melt the butter with the thyme in small saucepan over medium heat. Whisk in the flour and cook, stirring, until a sandy consistency, about 1 minute. Pour in the chicken broth, whisking constantly until smooth. Stir in 2 teaspoons salt and a few grinds of black pepper and bring to a boil. Lower the heat and simmer gently until thickened and the flour flavor is gone, about 10 minutes.
  3. Meanwhile, add the chicken, onions, carrots and celery to the prepared sheet pan and toss to combine; set aside.
  4. Stack 2 puff pastry sheets on top of each other on a lightly floured surface. Roll the puff pastry out to a 15-by-15-inch square. Cut the pastry into 1-inch strips so you have 15 strips total. Repeat with the remaining 2 puff pastry sheets.
  5. Pour the gravy over top of the chicken mixture on the sheet pan. Arrange the pastry strips over the filling lengthwise, overlapping them slightly so most of the filling is covered. Trim any overhang from the edges of the pan. Brush the pastry with the egg wash and bake until deep golden brown, 35 to 40 minutes.

Directions:

Heat oven to 200 degrees F. Line bake sheet with parchment.

  1. Mix 1 tablespoon brown sugar with 1/2 teaspoon cinnamon and a pinch of salt. Halve 4 bananas lengthwise; brush with 1 tablespoon melted butter and sprinkle with the cinnamon sugar. Saute to caramelize or broil until golden, about 3 minutes. Top with frozen yogurt, toasted almonds and chopped chocolate blackberries or strawberries.

Alternative:

You may choose to enjoy raw, and not caramelize bananas.

Meat
  • 1 lb Chicken breast tenderloins (optional)

  • 12 oz mushrooms

Pantry

  • 1 (14.5 oz) can Italian Cannelini beans

Instructions

  1. (Optional chicken): Season chicken with salt & pepper. Heat 1 tablespoon of olive oil in a large sauté pan or cast iron skillet over medium-high heat; add chicken and brown for 3 minutes on each side. Remove chicken and set aside on  plate.
  2. Add the remaining tablespoon olive oil to the pan. Add the sliced mushrooms in a single layer and brown, working in batches, a few minutes per side. Remove from the pan and set aside.
  3. Add the onion and sauté for 3 minutes. Add the garlic, and sundried tomatoes. Sauté for 2 minutes. Stir in the oregano, thyme, beans, diced tomatoes, and sugar.
  4. Transfer the chicken back to the pan and spoon some of the sauce and vegetables over top of the chicken. Cook, covered, on the stove top until the chicken is cooked through and the sauce is bubbling, about ten minutes. Return the mushrooms to the pan. Taste and add salt and pepper as needed. Serve hot, garnished with parsley.

Directions:

  • In a large skillet brown the turkey (optional) and season with salt. When the turkey is browned, add onion, garlic, black beans, cilantro,  diced tomatoes, and cumin. Mix well and simmer on low, covered for 20 minutes. Remove lid, add corn and simmer an additional 5 minutes or until all the liquid reduces.
  • Preheat oven to 350°. Cut peppers in half lengthwise, removing seeds and stem.
  • Place peppers, cut side up in an oven-proof dish. Fill each pepper with 1/2 cup turkey mixture. Pour about 1/3 cup water or bone broth on the bottom of the dish. Cover tight with foil. Bake 45-50 minutes, or until the peppers become soft.
  • Remove foil, top each with 1 1/2 tbsp of cheese and bake uncovered an additional 5 minutes.  Top with scallions and serve with reduced-fat sour cream if desired (optional).

Ingredients

  • 2 medium cooked beets, cut into 1-inch slices
  • Broccoli INCLUDED IN HALF BOX
  • 1 cup sliced sweet onion. INCLUDED IN BOX

  • 1 tomato, chunks INCLUDED IN BOX
  • 3 tablespoons fresh herbs, chopped

Instructions

Soak wooden skewers in water for 20 min to prevent burning. Slide veggies onto wood or metal skewers, brush with olive oil, lemon, season with herbs, salt and pepper. Dried Goods

  • 1 cup self-rising flour

Produce

  • 1/2 cup mixed apple or bananas, chopped
  • 1/2 cup mixed berries, optional topping

Condiments

  • 1 teas vanilla
  • 1 cup pure maple syrup
  • honey

Spices

  • sprinkle dusting cocoa or cinnamon

Dairy

  • 1 egg
  • 3 Tablespoons butter
  • 1 and 1/2 cup buttermilk or almond milk
  • yogurt or whipped cream, topping

Place flour in a mixing bowl and make a well in middle of flour to pour milk. Add the egg and buttermilk and stir. Set aside for 30 minutes to rest. Melt 2 T of the butter in pan on medium heat. Pour 1/4 cup pancake mix and a teas of fruit on top. Cook 1 minute or until bubbles appear on top. Flip, cook another minute. Slide onto plate. Repeat with remaining batter and fruits, greasing pan with butter between each batch. Warm honey, vanilla and maple syrup. Top pancakes with extra berries. Drizzle with Honey Vanilla Maple Syrup, dust with cocoa or cinnamon and add yogurt or whipped cream.  Note: buttermilk makes pancakes light & fluffy because ‘good bacteria’ is added to milk.

Unsoaked beans in crockpot will be tender and fully cooked after 5-6 hours.

  • Preheat oven to 400 degrees.
  • Place your carrots, lemon juice, thyme in a single layer on baking sheet.
  • Roast for 25 – 40 minutes, depending on size. Flip and roast until fork tender. Add a little water in dish to not scorch.
